Ingredients
- 3/4 cup self-raising flour
- 1/2 cup caster sugar
- 1 eggs
- 30g melted butter
- 1/3 cups milk
- 100g lemon(s), (2 small) juiced, and zests grated
- 1 dstspn (dessert spoon) cornflour
- 1/2 tsp vanilla essence
- 1/2 cup boiling water
- 20g Icing sugar for dusting
- 250ml thickened cream, to serve
Method
- Preheat fan-forced oven to 180°C (190°C for conventional oven).
- In a large bowl, mix flour and 1½ cups of the caster sugar in a bowl.
- Add egg, butter, milk and lemon zest and mix gently to combine.
- Pour mixture into a large oven-proof baking dish.
- Combine cornflour, vanilla essence and the remaining cup of caster sugar and sprinkle over top of pudding mix.
- Combine lemon juice with boiling water and gently pour over pudding mix.
- Bake pudding for 40 minutes or until puffed and golden.
- Dust with icing sugar and serve with cream or custard.
